Girls Day Cupcakes

Ok. We've already established I'm not Australian. But I still made Lamingtons. I'm not Japanese either, but an excuse to bake and celebrate girls (I'm still a girl at heart) sounds good to me. Wednesdays are my day to volunteer in Gabe's classroom. A half day of first graders...every week. You see why I bake? It's escapism. I decided to honor the Hawaii adopted and Japanese Girls Day tradition by baking mini pink cupcakes. The frosting and sprinkles are crazy looking---it was a pink explosion on top of the vanilla cupcakes (I've learned not to waste my time with anything fancier than that for the kids). All of the kids (Japanese or not...boys included) were very happy to receive the pink treat. There was no celebration of the day other than that, but I guess the new book Isom picked up for me at Borders can count as my Girls Day treat. Next year, I'll have to plan a big girls party (manicures and lunch?!) for Girls Day.

March Goal: 30 Beaches, 30 Days

  Third monthly challenge complete!  For March, my goal was to go to thirty different beaches for thirty days.  To recap, in January I hiked thirty different trails for thirty days, and in February I practiced different styles of Yoga for twenty-eight days.   Mountain.  Mat.  Marine.  The first three months of my year long journey of completing monthly goals has been achieved.  I feel good.  I have worked my heart with cardio,  worked my body with stretching, and worked my soul with the happiness that being outside, toes in the sand and salt water washing over me, can provide. August Goal: 30 Days of New Recipes

Month eight is complete!  August was a month of learning about new ingredients, trying new recipes, making a few mistakes in the kitchen, and filling our hearts and bellies with happiness and deliciousness.  I’m so glad I made the eighth month of my twelve month long challenge/journey, a culinary challenge.  Last month, in July, my challenge was to document delight…I documented it everyday for thirty days and then neglected to document my DELIGHT journey on the Blog.  It could still happen…   August is my youngest sons birth month.  He loves to cook and bake and cause general chaos in the kitchen so it seemed appropriate that I make August the month of new recipes.  Also, I love books…to include cookbooks…which I seem to have a pretty nice collection of.  Anyway, I have all these cookbooks and many of them hadn’t even been cracked open or recipes attempted…until now.  Most all the cookbooks turned out to be winners (with only a couple of non-...

Nanakuli Exploration: Pu'u Heleakala

Eight o' eight state of mind---the Hawaiian Pyramid Trail offered expansive westside views, a mini Hawaiian flag, moderate graffiti, and a hot rocky landscape up to Pu'u Heleakala, better known as the Hawaiian Pyramid. If you are looking for a hike offering you a break from the Eastside forest and city scape views---you will love this steady inclined hike located at the back of a small neighborhood in Nanakuli (meaning "look at knee", "knee inspection", or "pretend to be deaf"...wildly different interpretations!) on O'ahu's westside.  The pictures let you know that the terrain is hot and dry at this time of year (mid August).  I would love to revisit this trail again in cooler, winter months when every peak and valley is lush and green.  As it was, this trail was still enjoyable due to the immediate and consistent views of the Pacific Ocean.  Within five minutes of steady uphill rock climbing, when we turned around, we alrea...
